Thyme Gibson
You can’t go wrong with the classics, and we’ve barely altered this delicious, savory Gibson cocktail except to add a healthy sprig of thyme as a garnish, to amp up the thyme in our Gin Recipe 02. When we’re enjoying this cocktail with a cheese board or before a hearty meal, we like to add a tiny splash of the pickled onion juice to the cocktail for an added savory edge, but feel free to experiment any way you like!
Ingredients
Serves 1
2 oz Common Ground Spirits Gin Recipe 02 (black currant and thyme)
½ oz Vermouth
1 large sprig fresh thyme
Pickled onions for garnish
Gently slap the thyme sprig over the top of the cocktail, then add to the glass along with two pickled onions on a cocktail skewer. Serve immediately.
Chill down a Gibson glass by filling it with ice water.
In a tall shaker or mixing glass, add ice, gin, vermouth, and an optional spoonful of pickled onion juice, stirring until very cold.
Empty the ice water from the glass, then strain the cocktail into the glass.
