Early Grey Refresher

If you’re looking for a refreshing drink for lazy summer afternoons, look no further than our latest creation, the Earl Grey Refresher. Unlike most tea or cucumber-based cocktails, this baby is barely sweet at all, with just enough honey to bolster the flavors of the star ingredients. It’s light on booze, so you can treat yourself to more than one without losing your head. And best of all, this cocktail offers up a flavor profile that is so much more than the sum of its parts. Think farmer’s market stall—fresh flowers, dewy produce, and leafy herbs.

Ingredients

1 c water

1 bag decaffeinated Earl Grey Tea (or 1 T loose leaf tea)

2 T honey

Pinch of salt

1 medium-sized cucumber, sliced into strips lengthwise

1 lemon peel strip, plus extra for garnish

1 oz Common Ground Spirits gin Recipe 02 (black currant & thyme)

¼ oz lemon juice

Instructions

1. Make the tea for the cocktail by heating the water in a small saucepan until boiling. Remove from heat and add the tea, honey, salt, cucumber, and lemon peel and steep for 4-5 minutes. Remove the tea bag and continue to steep for another 15 minutes, then strain into a measuring cup or glass container and allow to cool. You will have enough tea mixture for 4 cocktails.

*No need to peel the cucumbers unless the peel is tough and bitter. Also, save 1 peel for garnish!

• To make the cocktail, fill a large shaker with ice, then add 2 oz of the tea mixture, 1 oz of gin, and ¼ oz of lemon juice. Shake until very cold, strain into a coupe, garnish with lemon and cucumber peel, and serve. If you prefer to make this a spritz, use a Collins glass and top with sparkling water.
