Step 1: Combine gin, lemon juice, and simple syrup in a cocktail shaker. Fill the shaker with ice, cover, and shake vigorously until the outside of the shaker is very cold, about 20 seconds. Step 2: Strain cocktail through a Hawthorne strainer or a slotted spoon into a champagne flute or coupe glass. Top with Champagne; garnish with lemon twist.
• Ingredients list. 1½ ounces gin, Common Ground Spirit Black Currant and Thyme Gin ¾ ounce fresh lemon juice ¾ ounce thyme simple syrup 2 ounces Champagne Long spiral lemon twist (for serving) To make the thyme simple syrup, combine equal parts sugar and water along with a good amount of fresh thyme (to taste). Heat the ingredients over medium high heat until the sugar is dissolved. Remove from heat and cover for 30 - 60 minutes. Strain the mixture into a glass for immediate use.
